As a basis of Ethiopian cookery, injera, a delicious flatbread made from teff flour, lies beneath almost every recipe. Injera is used to grasp thick stews prepared from meat and vegetables. The Ethiopian meal is unique in that it is consumed without any utensils. Instead, the right hand is used to tear pieces of injera to grasp the meat and vegetables.
